Vermouth Inspired Wild Ale
I love making beers that are inspired by food and other beverages. Vermouth isn’t often enjoyed on its own, but it does have lots of very interesting flavors that I thought would make a great barrel aged sour beer. Verboten isn’t intended to taste exactly like vermouth, but it does share many of the same ingredients, and we tasted a few vermouths to help inspire us.
We started with a very unique blend of base beers. 40% rustic witbier, 20% dark sour in whisky barrels, 20% red sour in whisky barrels, and 20% deadcrush, which is our wine hybrid made with Petite Syrah wine grapes.
The result is a copper beer with a brown head and some bitterness from the roots and herbs. It’s got tons of complexity, and gets even better as it warms slight in the glass. Chase it down with a delicious vermouth cocktail such as a Negroni or Manhattan. Cheers!
