Blended Wild Ale With Red Beets
Petalum is back! This beer is the cousin of The Carrot King, in that they are both bottle conditioned using the sugar from root vegetables. For Petalum we use a blend of 40% red wild ale and 60% mixed culture saison which was brewed with Admiral Pilsner malt. The Carrot King doesn’t necessarily taste like carrots, giving flavors that are more spicy earthy and herbal such as menthol and horseradish. Petalum on the other hand tastes exactly like red beet juice. It’s deep red in color with a vibrant pink head, and does not need to be rotated in the bottle like Carrot King. It’s definitely one of the more beautiful looking beers we make, and a personal favorite of mine.
This batch is slightly higher in carbonation than most of our beers. You won’t have any problems if you get the bottle sufficiently cold, but please open carefully and have a glass ready to pour in to just in case. Cheers!
