Mas is a very special beer to us. Named for the proprietor of Masumoto Family Farm, David “Mas” Masumoto, Mas represents a special collaboration between us and the Masumoto family.
As the demand from brewers for Mas’ fruit grew over the years, Mas had the idea to grow and harvest fruit with the intention of guiding it toward being perfect for use in beer. This “Late Harvest” fruit requires more aggressive pruning (reducing the tree’s yield) and leaving the fruit to ripen on the branch beyond when it would normally be harvested. The result is stone fruit deep red flesh and an incredible density of flavor, with notes of mango and papaya.
We were honored to be the first brewery ever to be offered this fruit (and maybe still the only one?).
Like any of our beers, a batch is like a vintage of wine; representing a snapshot in time of what’s happening in our barrel room as well as out in the orchard. This year’s stone fruit beers have been more delicate than past years, with flavor that’s much more complex than it is loud. Mas is no exception. The nose has the mango and papaya notes we’ve associated with this fruit in the past, but the cereal grain quality of the base beer shines through and underpins delicate floral notes and brett-driven farmhouse aromas.
