Blended Sour/Wild Ale with Masumoto Gold Dust Peaches
We weren’t planning to do a club beer with Masumoto fruit this year. We already do so many different beers with their fruit, and we didn’t want to over do it. BUT, when we tasted this first round of fruit from the farm this year I was blown away. I’ve been using Masumoto fruit in beer for four years now, and this seemed to me to possibly be the best fruit I’d ever tasted from them. So, we quickly made arrangements to get another variety of peaches for Akimbo Batch 2 (coming soon) and made plans to do a club beer.
This blend was the result of one of our blending sessions with some Single Barrel Syndicate members. I believe the final blend was a compromise mix of the top two winners from that day. We wanted a blend that was not too funky, hoppy, or sour, to really let the fruit shine through. We decided on a blend of 30% simple saison aged in a chardonnay barrel, and the remaining 60% from two different barrels of our second aged hop sour batch. The result is something magical. This beer is tasting great right now, but it is pretty young in the bottle. I’d say it’ll peak and be best within 3-12 months, but also evolve and be great for up to 3 years at least.
Some history on the name of this beer. The name of our brewery, Cellador, is a play on the phrase “Cellar Door.” Many poets, writers, and linguists have said that Cellar Door is the most beautiful phrase in the English language. The first references to this idea date back to the early 1900s. In 1894 a children’s song was written with the line “Slide Down My Cellar Door” which some have said might have been the origin/inspiration for this whole idea. The phrase denotes “innocent friendship.” I wanted to name a beer in honor of this song. My first choice was to call it “Forevermore.” But thankfuly before it was too late, a friend pointed out that The Rare Barrel already had a beer called “For Ever More.” So, we just decided to be weird and name it “Slide Down My Cellar Door.” If that bothers you, I’m not sorry.
This beer was packaged from a single 400L red wine puncheon. We packaged it in all 375 ml bottles, and 1 keg for the Syndicate party.
